The harvest is carried out during the month of September when the grapes have reached their proper maturity. Although grape vines are few in the countryside around Montisi since production focuses mainly on oil, the vineyards make a quality product.

The hand harvested grapes, which in La Grancia come from the Sangiovese, Canaiolo, Merlot, Trebbiano and Malvisia grapes, are brought to the wine cellar where the traditional and careful operations for the production and aging of DOC wines will be carried out.
